sunday’s recipe: summer picnic ideas

well, it seems as though i took an accidental blogging hiatus for most of the summer. i find it ironic because summer is such an inspiring time for me, full of adventures and fun projects! good thing it’s not quite autumn yet! even though the weather has started to shift here in the pacific northwest, i still think summer lasts a few more weeks until the equinox.

with that in mind, i want to share a most fabulous picnic i had near the beginning of summer 🙂


our girl’s garden picnic was an uplifting time of good conversation, delicious food, raspberry jam crafting and lots of laughter. it is so important for women to gather together. i know i need these ladies in my life and am so thankful for their support, wisdom and love.

IMG_3379for today’s “sunday’s recipe,” i am sharing a few recipes from our picnic. first up, a staple in our friendship…oven baked brie with figs & thyme. it is as delicious as it sounds! years ago, janessa brought this to a dinner party, and it has stuck around ever since.

sunday’s recipes
baked brie with figs & thyme

ingredients:
-one triangle of brie
-4-5 figs, quartered (7-8 if using dried figs)
-10 sprigs fresh thyme, separated
-drizzle of raw honey

instructions:
preheat oven to 350 degrees. place brie in a small cast iron or glass pan, sprinkle quartered figs and thyme over the top and bake for 5-15 minutes, until the brie is soft to touch, but not too melted. drizzle honey heartily over it all before serving!

up next: rosemary & honey spritzer! my friend natalie received this recipe from her aunt and whipped it up for our picnic. it is delightfully refreshing and was perfect for the sunny day.

rosemary spritzer

ingredients:
-1 cup water
-fist-full of rosemary (can also use lavender, rose petals & other herbs!)
-1 cup raw honey

instructions:
bring 1 cup of water to a boil, turn off heat and add rosemary sprigs, let steep for 1-2 hours. when the infusion has cooled to luke-warm, add 1 cup of raw honey. (i have adapted this from your typical recipe that boils honey & water together, because i want to keep the medicinal properties of the raw honey.) after 1-2 hours remove the rosemary sprigs and store infused honey in the refrigerator for up to 3 weeks.

add about 3 tablespoons to a glass of sparkling water over ice and be refreshed!
